How to get more greens (without a green smoothie)

Green smoothies are definitely on trend – the amount of vegetables that can be hidden in one simple drink has become some kind of hallmark for how healthy you are. Want the truth? All vegetables and fruits are amazing, greens have particular health benefits that are great for a gentle detox, and for glowing skin. However, there are ways to include greens that are blender free!

So if you think that drinking a green smoothie is kind of like face planting into a pile of fresh lawn cuttings except you need to smile and pretend you enjoy it, then we may just have the right recipe for you.

Rocket, lemon + sunflower seed pesto
(dairy free. gluten free)

120g rocket, washed
1 lemon, skin removed
1 cup sunflower seeds
1 big pinch salt + pepper
1/4 cup olive oil (or macadamia oil)

Blitz the pesto ingredients, except the oil, for two to three minutes. Add the oil in a stream until you reach the desired consistency. If you have used the 1/4 cup and it is still chunky, then add water one tablespoon at a time – this saves your pesto from tasting like oil and helps make a lighter pesto!

Store the pesto with a layer of oil covering the top in the fridge, or freeze in an ice cube tray to use portion by portion.

So how to use this pesto?

  1. Under your avocado on toast. Boost the nutrition of your breakfast in flash!

  2. Dolloped into a baking paper parcel when cooking white fish in the oven.

  3. Blitzed with a tin of white beans for a quick and easy dip.

  4. Over pasta or zoodles, and topped with shredded chicken for a quick dinner.

  5. Use 1 tablespoon pesto, with 2 tablespoons apple cider vinegar and 1 tablespoon olive oil for a super healthy salad dressing.

Now you can see that if blenders aren't your thing, you can still get plenty of greens, and you can still have good health.
